Man oh man, there is nothing like chowing down on some fresh fruit in the summertime! A good fruit salad is the perfect finishing touch to any barbecue, picnic, or just a summertime dinner party. And for me, the key to good fruit salad is a super simple dressing or glaze. I want to taste the fruit in all its sweet and juicy glory.
So, go figure, I opened my fridge the other day and found too much fruit. There have been some really great deals at my grocery stores lately and my crisper drawer was full of nectarines, and berries, and green grapes.
Luckily, we had invited my parents over for dinner because the Hubs wanted me to make a big roast into some French Dip sandwiches. A Fruit Salad with Strawberry Citrus Glaze was going to be a great side dish for this summertime get together!
When I started to think about dressing possibilities for a fruit salad, I wasn’t all that excited. I’m sure you’ve seen the one that uses dry vanilla pudding mix…too sweet. I’ve made fruit salads before with honey and lemon juice and poppy seeds…too fussy.
I needed just an easy, simple coating to pull all the fruit flavors together. So I scanned the fridge…and spotted some seedless strawberry jam. Now we’re talking. I added lemon juice to cut the sweetness, orange juice for some tang, and olive oil to give it a little body.
When summertime fruits are ripe and juicy and delicious, all you need is a simple glaze like this one to make them sing. Mix it up with whatever fruits are lookin’ good to you and you can also make it big enough to feed any crowd. Or just make a big bowl for yourself to snack on in the sweet summer sunshine 🙂
- 4 to 5 c fruit, cut in bit size pieces such as nectarines, berries, and grapes
- 1 T seedless strawberry jam
- 1 T lemon juice
- 1 T orange juice
- 1 T olive oil
- Start by cleaning and cutting up all the fruit, place in a large bowl
- In a small bowl, add the jam and use a spoon to smooth it out
- Add in the lemon juice and mix well, until smooth
- Add in the orange and whisk together
- While whisking, stream in the olive oil
- Once fully combined, add the glaze to the fruit
- Gently stir to combine
- Chill before serving
- Refrigerate any leftovers, will keep for about 3 days
